Southwestern Chicken Chili

Southwestern Chicken Chili
 
1 regular can chicken broth
1 regular can corn kernels

1 regular can black beans
1 can diced tomatoes (14.5 oz)
1 can tomato paste (6 oz)
1 large onion, chopped
1 tsp minced garlic
1 tsp cumin powder
1/4 - 1/2 tsp red pepper
vegetable oil
1 package ground chicken
2 tsp salt
 
 
 
In 4 quart sauce pan, sauté onions in vegetable oil on medium heat until soft.
Add garlic, cumin powder, red pepper, salt and sauté for 1 minute.  Stir well.
Add ground chicken and cook chicken until no longer pink.  Stir well.
Add chicken broth, corn, black beans, diced tomatoes and tomato paste.
Bring to a boil for one minute.
Turn heat down to low and simmer for 30 minutes.
