Leftover Rice Pudding Recipe

Ingredients
• 2 cups cooked long grain rice
• 2 cups whole milk
• 3 tablespoons plus 1 teaspoon sugar
• 1/8 teaspoon salt
• 1 teaspoon vanilla extract
• Whipped cream, optional
Directions
• 1. In a large saucepan, combine the rice, milk, sugar and salt. Cook, uncovered, over medium heat for 20 minutes or until thickened, stirring often. Remove from the heat; stir in vanilla. Spoon into serving dishes. Serve warm; top with whipped cream if desired.Yield: 4 servings.

My grandad used to make me rice pudding and we used to recite the following verse:

What is the matter with Mary Jane?
She’s perfectly well, and she hasn’t a pain,
And it’s lovely rice pudding for dinner again!—
