Emma’s embarrassingly nutritious quiche

Ingredients:

Crust:

2 cups whole wheat flour

2/3 cup lard

2 tbsp butter

4 tbsp water

Filling

4 eggs

2 cups of grated cheese 

8 oz cream cheese

1 cup of sour cream

1 red pepper (chopped)

½ onion (chopped)

1 large or two small tomatoes (chopped)

6 basil leaves (chopped)


Instructions

Preheat oven to 375 degrees

Mix crust in bowl

Roll out dough

Place in 9” pan

Blend eggs, cream cheese, 

and sour cream 

sauté pepper, onion, and tomatoes

 in one tablespoon on olive oil.

Pour egg mixture, vegetables, 

basil and finally grated cheese into pan

Cook for 30 minutes.

Serve warm or cold.
