flourless peanut butter cookies

Ingredients 1 cup natural peanut butter 1 cup sugar 1 teaspoon pure vanilla extract 1 large egg, lightly beaten Coarse sea salt, for sprinkling Directions Preheat the oven to 350 degrees F and place the racks in the upper and lower third of the oven. In a medium bowl, mix the peanut butter, sugar, vanilla and egg until well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies. Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Transfer to racks to cool. Repeat with the remaining dough. Fish Pie

I'm going to try to make this tonight. Fish Pie INGREDIENTS • 8 ½ fl oz/250 ml fish stock • 8 ½ fl oz/250 ml milk + 2 tbsp for the potatoes • 12 oz/350g asstd. fish pieces (see note below)*** • 1 bay leaf • 750g warm, creamed, mashed potatoes • 4tbsp  butter • 1 medium sized leek, the white, washed and finely sliced • 4tbsp all purpose/plain flour • 1 tbsp finely chopped fresh parsley • Salt and pepper • Handful grated cheddar cheese (optional) • Prep Time: 30 minutes • Cook Time: 30 minutes • Total Time: 60 minutes • Yield: Serves 4 PREPARATION Serves 4 • Heat the oven to 355 °F/180 °C • Pour the fish stock and milk into a large saucepan and bring to a gentle simmer. Add the fish pieces and bay leaf and poach for 5 mins. Remove the fish pieces with a slotted spoon and keep to one side. White Chocolate Chip Bread Pudding like at Angelina Ristorante

White Chocolate Chip Bread Pudding with ice-cream I am hoping this tastes like the food at Angelina Ristorante  in Chicago where I ate this weekend with Jocelyn and Brett. ingredients • 1 loaf bread with crust, cut into 1-inch cubes • 10 tablespoons (1 1/4 sticks) unsalted butter, melted • 1 cup white chocolate chips • 2 1/2 cups half and half • 1 cup sugar • 8 large eggs • 2 tablespoons vanilla extract • 1/8 teaspoon salt • 2 tablespoons (packed) dark brown sugar preparation Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Place bread in large bowl; pour 8 tablespoons melted butter over bread and toss to coat. Add chocolate chips and toss to combine. Transfer mixture to prepared dish. Whisk half and half, 1 cup sugar, eggs, egg yolks, vanilla extract, and salt in large bowl to blend. Pour over bread cubes in dish. Let stand 30 minutes, occasionally pressing bread cubes into custard. (Can be prepared 1 day ahead. Cover and refrigerate.) Drizzle remain

snickerdoodle cheesecake bars

CHEESECAKE • 2 blocks cream cheese, softened • 1/2 c. sugar • 2 large eggs • 1/2 tsp. vanilla extract • pinch of kosher salt SNICKERDOODLE • 2 1/4 c. all-purpose flour • 1 tsp. salt • 1/2 tsp. baking soda • 1 1/2 sticks unsalted butter, melted • 1 c. sugar • 1/2 c. brown sugar • 2 eggs • 1 tsp. vanilla extract • 1 1/2 tsp. ground cinnamon • cinnamon sugar, for sprinkling DIRECTIONS • Preheat oven to 350º. Grease a 9"-x-13" baking pan with cooking spray. • Prepare cheesecake mixture: In a large bowl, beat cream cheese and 1/2 cup sugar until fluffy. Add eggs, vanilla, and salt and beat until combined. • Prepare snickerdoodle dough: In a medium bowl, whisk together flour, baking soda, and salt. In a large bowl, beat butter and sugar with a hand mixer until pale and fluffy, about 3 minutes. Add eggs and vanilla and mix until just combined. Savoury Muffins

Ingredients • 1 3/4 cups all-purpose flour • 1 1/2 teaspoons baking powder • 1 teaspoon baking soda • 1/2 teaspoon salt • 1/4 cup butter, melted • 1 egg, lightly beaten • 1 cup milk • 1 cup shredded veg • 1 clove garlic, minced • 3/4 cup shredded Cheddar cheese Directions • Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray. • Mix the flour, baking powder, baking soda, and salt in a bowl. • In another bowl, stir together the butter, egg, milk, veg and garlic until well blended. Mix the flour mixture into the milk mixture, about 1/2 cup at a time, stirring between additions, until the flour mixture is incorporated. Fold in the Cheddar cheese and pour the batter into the prepared muffin cups. • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 30 to 35 minutes. Allow muffins to cool slightly before removing from muffin cups; serve warm. Refrigerate leftovers.

pumpkin casserole/souffle

Ingredients • 1/2 cup white sugar • 1/2 cup butter • 3 large eggs • 1 1/2 cups pumpkin puree • 1 cup milk • 1/2 cup cake flour • 2 teaspoons baking powder • 1 pinch ground cinnamon, or as desired Directions • Preheat oven to 450 degrees F (230 degrees C). Grease a 9-inch square baking dish. • Beat sugar, butter, and eggs together in a bowl using an electric mixer until smooth and creamy; add pumpkin and mix well. Beat milk, flour, and baking powder into pumpkin mixture until smooth; pour into the prepared baking dish and sprinkle cinnamon over the top. • Bake in the preheated oven until set in the middle, 45 minutes to 1 hour.
