pizza dough breadsticks

• 1(10 ounce) can prepared pizza crust • 1tablespoon butter, melted • 1⁄2cup provolone cheese, shredded • 1tablespoon parmesan cheese • 1tablespoon dried basil • 1⁄4teaspoon garlic salt DIRECTIONS • Preheat oven to 425. • Unroll pizza dough onto a greased cookie sheet and brush with butter. • Sprinkle cheeses and spices evenly over the dough. • With a pizza cutter, cut dough lengthwise into 12 long strips. Then cut those in half to make 24 strips. • Do not seperate strips. • Bake for 10-12 minutes or until light golden brown. • Recut along each strip and remove from cooking sheet. • Serve sticks warm with marinara sauce.

FAVORITE OVEN-BAKED CHICKEN PARMESAN

FAVORITE OVEN-BAKED CHICKEN PARMESAN 4 boneless, skinless chicken breast halves (about 1 1/4 lbs) 1 egg, slightly beaten 3/4 cup Italian seasoned dry bread crumbs 1 jar (26 ounces) marinara sauce 1 cup Parmesan -or- shredded Mozzarella cheese Preheat oven to 400°F. Dip chicken in egg, then bread crumbs, coating well. In a 13 x 9-inch glass baking dish, arrange chicken. Bake uncovered 20 minutes. (See NOTE) Pour the marinara sauce over chicken, then top with cheese. Bake an additional 10 minutes or until chicken is no longer pink. Serve if desired, with hot cooked pasta. Makes 4 servings NOTE: If using a metal pan, increase the oven temperature by 25 degrees.

Apple Cashew salad

Apple Cashew salad toss together: 1 head iceberg lettuce 1 head red leaf lettuce 4 oz cashew pieces 4 oz shredded swiss 2 granny smith apples (I soaked mine in apple juice that had vitamin C added to prevent browning- pineapple juice tastes even better, but I didn't have that on hand, OJ works, too) Dressing: the dressing didn't taste right to me last night, but here's the recipe.. maybe I goofed on it b/c it tasted too much of vinegar 1 cup veg oil 1/3 c red wine vinegar 1/2 cup sugar 1/2 tsp poppy seed 1tsp grated onion mix together and add to salad right before serving- toss it all in evenly Sara

breakfast burritos

Here's how I make the breakfast burritos: * I apologize, I don't always use exact measurements when I cook * I usually start with the salsa (you can make the night before) 1 can of corn 1 can of black beans partial can of green chilies 2-3 diced tomatoes (1-2 cans would be ok) diced onions (1/8 to 1/4 cup depending on your taste) sweet basil, garlic, salt, red pepper, sugar and cilantro to taste * Brown rice (I don't usually like Minute Rice, but their brown rice is good. I had a small box and used it all). * It's not necessary, but I add about 2 TBLS of taco sauce to the rice. * Cheddar cheese * Egg beaters * flour or wheat tortillas (at least 12 per batch) Then, just start an assembly line.  Fill the tortillas with the salsa, rice, cheese, and eggs.  I usually try to make up the whole recipe at one time, individually wrap and freeze the extra. It's a variation of a Rachel Ray recipe and what my husband and I like. I'm glad you liked it, Here it is, enjoy it. 2 pounds ground meat (either pork, sirloin or chicken) I used ground pork. 1/2 an onion,finely chopped 4 to 6 cloves of garlic, finely chopped ( I used 5) 1 tablespoon Worcestershire sauce...or about, I just kind of throw it in there 3 tablespoons chili powder, about 2 palm fulls 2 tablespoons cumin, about 1 palm full 2 tablespoon cayenne pepper, about 1 palm full 1 (14 1/2 ounce) can petite diced tomatoes 1 (8 ounce ) can tomato sauce 1 (15 ounce) can  beans, drained I usually serve it with jalapeno corn bread, cilantro, finely chopped onions and cheese...as Rachel Ray would say YUM-O.

Crispy Peanut Butter Treats

Crispy Peanut Butter Treats 2 cups (12 ounces) semisweet chocolate chips 3/4 cup peanut butter 7 cups rice crispy cereal 1 package (10 ounces) peanut butter chips 1/4 cup butter 2 Tbsp water 1/2 tsp vanilla 1 cup confectioners' sugar Heat choc. chips and peanut butter uncovered in microwave on high for 1 minute. Stir, microwave 30-45 seconds longer or until chips are melted; stir until smooth. Stir in cereal until evenly coated. Pat half into a greased 13x9 dish. Heat peanut butter and butter uncovered in microwave for 1 minute. Stir, microwave 10-20 seconds longer or until chips are melted;stir until smooth. Stir in water, vanilla and confectioners' sugar until smooth. Carefully spread over the cereal layer.Press remaining cereal mixture over peanut butter layer. Cover and chill for at least one hour. Cut into squares.

Easy Chocolate Fudge

Easy Chocolate Fudge 2 Tbsp butter 2/3 cup evaporated milk 1 2/3 cups sugar 1/2 tsp salt 2 cups miniature marshmallows 1 1/2 cup semi-sweet choc. chips 1 tsp vanilla Combine butter, milk, sugar and salt in a saucepan over medium heat. Bring to a boil, cook 4-5 minutes stirring constantly. Remove from heat and stir in marshmallows, choc. chips and vanilla. Mix about 1 minute. Pour into a 8-inch buttered pan and let cool. (I usually put in the refrigerator for an hour or so. It is easier to cut that way)

Black Bean Soup

Black Bean Soup INGREDIENTS: 4 cans (15 oz. each) Black Beans 3 slices, rough chopped Bacon, Sliced 1 tbsp. Olive Oil 1 bottle (12 oz.) Beer ∏ cup Water 1 tbsp. Sherry, Dry ≤ cup Onions, diced ∏ cup Green peppers, diced 2 tbsp. Garlic Ï€ tsp. Ground Cumin 2 tsp. Tabasco sauce To Taste Adobo seasoning, salt and pepper PREPARATION: Heat oil in a pot on medium heat. Add the chopped bacon and sauté for 1 minute. Add the peppers, onions and garlic. Sauté for approximately 2 minutes. Add the beer and Tabasco sauce, and bring to a boil. Add 3 cans of beans with their juice and bring back to a boil. Using a hand held kitchen blender, puree the soup until smooth. Add the remaining 1 can of beans and bring back to a boil. Add the Sherry wine, and season to taste with Adobo seasoning or salt and pepper. Serve hot with sour cream or steamed rice.

Banana Muffins

INGREDIENTS 2 cups all-purpose flour 1 cup white sugar 1 cup mashed ripe banana 1/2 cup margarine 2 eggs 6 tablespoons milk 2 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt DIRECTIONS 1 In a medium bowl mix flour, baking powder, baking soda, salt, and cinnamon and set aside. 2 In a separate bowl cream margarine and sugar, add eggs and mix until smooth. Stir in milk and mashed banana and mix well. 3 Fold in flour mixture into the liquid ingredients until combined. 4 Fill greased muffin tins two-thirds of the way full. 5 Bake in a preheated 350 degree F (175 degrees C) oven for 25 to 30 minutes.
