Jamia's pork roast recipe

Jamia's pork roast recipe I lightly seasoned  ~2.5 pound pork loin tenderloin roast  with salt and pepper and did a half ass job of browning it a skillet w/ a little olive oil.  The roast I had was actually in two pieces, but still frozen together as one and not thawed all the way so it was "browned" as one piece. Since the surface wasn't completely thawed either, there were a few spots that didn't hit the skillet and were still pink.  This step probably wasn't necessary at all.  Browning helps give the meat a better flavor, but with it being soaked in this sauce I doubt anyone would know the difference. At the same time I brought this mixture to a boil in saucepan: 1 cup granulated sugar 1/2 cup white vinegar 4 tablespoons soy sauce 4 tablespoons ketchup 1 20 oz. can crushed pineapple, mostly drained I happened to have a mango and thought it would go good with it...so I diced it up and added it and then I tasted the mixture

Southwestern Chicken Chili

Southwestern Chicken Chili   1 regular can chicken broth 1 regular can corn kernels 1 regular can black beans 1 can diced tomatoes (14.5 oz) 1 can tomato paste (6 oz) 1 large onion, chopped 1 tsp minced garlic 1 tsp cumin powder 1/4 - 1/2 tsp red pepper vegetable oil 1 package ground chicken 2 tsp salt       In 4 quart sauce pan, sauté onions in vegetable oil on medium heat until soft. Add garlic, cumin powder, red pepper, salt and sauté for 1 minute.  Stir well. Add ground chicken and cook chicken until no longer pink.  Stir well. Add chicken broth, corn, black beans, diced tomatoes and tomato paste. Bring to a boil for one minute. Turn heat down to low and simmer for 30 minutes. Enjoy ! Asnani, Monica, M.D.  

Sweet Potato Casserole

Sweet Potato Casserole                  8 servings Ingredients: 5 sweet potatoes, peeled   and sliced    ∏ cup packed brown sugar Ï€ cup butter 2 Tbsp orange juice 2 pinches cinnamon 1 (10.5 oz) package mini marshmallows Directions: 1)    Preheat oven to 350 degrees 2)    Boil sliced sweet potatoes until tender. Drain. 3)    In a large bowl, blend the potatoes until creamy. Stir in the butter, Brown sugar, orange juice and cinnamon. 4)    Spread the sweet potato mixture into a 9X13 inch pan. Sprinkle the mini marshmallows over the top and bake until golden. by deena s.

Chocolate cake

I wanted to share the recipe for the Chocolate Covered Cherry Cake I brought to Danielle's on Sunday.  I know a few of you had asked for the recipe.    Cake:  1 pkg devils food cake mix  1 can 21oz cherry pie filling  2 eggs  1 tsp. almond extract    Frosting:  1c. sugar  1/3c butter  1/3c whole milk  1c semi sweet chocolate chips (you can add more to make it really chocolaty- I measured mine out with a mounded top).    heat oven to 350 degrees  mix cake mix, pie filling, eggs and almond extract on low speed for 1 min.  Make sure all cake mix has been incorporated and then increase the speed to medium for another minute or 2.  Bake in 9x13 pan for 30-35 min (just until the cake springs)    make the frosting using a saucepan on medium-low heat.  Add sugar, butter and milk and stir constantly until it boils.  As you stir, let it boil for a minute.  Then remove it from heat and add the chocolate chips and mix well.  Pour it over the cake and use a sp
