Classic Vanilla Buttercream Frosting

Classic American Buttercream frosting. This recipe uses powdered sugar, butter, vanilla and milk. This is a great recipe for decorating and piping on cupcakes and cake. Ingredients 1 cup unsalted butter (2 sticks or 1/2 pound), softened (but not melted!) Ideal texture should be like ice cream. 3-4 cups confectioners (powdered) sugar, SIFTED 1/4 teaspoon table salt 1 tablespoon vanilla extract up to 4 tablespoons milk or heavy cream Instructions 1. Beat butter for a few minutes with a mixer with the paddle attachment on medium speed. Add 3 cups of powdered sugar and turn your mixer on the lowest speed (so the sugar doesn't blow everywhere) until the sugar has been incorporated with the butter. Increase mixer speed to medium and add vanilla extract, salt, and 2 tablespoons of milk/cream and beat for 3 minutes. If your frosting needs a more stiff consistency, add remaining sugar. If your frosting needs to be thinned out, add remaining milk 1 tablespoons at a time.

Emma’s embarrassingly nutritious quiche

Ingredients: Crust: • 2 cups whole wheat flour • 2/3 cup lard • 2 tbsp butter • 4 tbsp water Filling • 4 eggs • 2 cups of grated cheese  • 8 oz cream cheese • 1 cup of sour cream • 1 red pepper (chopped) • ½ onion (chopped) • 1 large or two small tomatoes (chopped) • 6 basil leaves (chopped) Instructions • Preheat oven to 375 degrees • Mix crust in bowl • Roll out dough • Place in 9” pan • Blend eggs, cream cheese,  and sour cream  • sauté pepper, onion, and tomatoes  in one tablespoon on olive oil. • Pour egg mixture, vegetables,  basil and finally grated cheese into pan • Cook for 30 minutes. Serve warm or cold.

Sesame Cookies

2 cups butter or oleo , softened  1 ½ cups sugar 3 cups flour 1 cup sesame seeds 2 cups coconut ( I don’t use this because I don’t care for it and the cookies turn out fine)  ½ cup finely chopped almonds Cream butter, gradually add sugar and beat till light and fluffy. Add flour and mix just  until combined.  Stir in sesame seeds, coconut and nuts just until mixed well. Divide dough into thirds. Place one batch of the dough on a long sheet of waxed paper . Shape into long rolls 2 inches in diameter. Repeat with remaining dough. Wrap and refrigerate until firm . Preheat oven to 300. Cut rolls into ¼ inch slices. Bake on ungreased cookie sheet 30 minutes. Remove to wire rack to cool . Makes about 6 dozen 

Taco Soup with Black Beans

  1 lb. Ground beef, browned & drained 28- oz. can crushed tomatoes 15 1/4 -oz. can corn, undrained 15 -oz. can black beans, undrained 15 1/2-oz. can red kidney beans, undrained 1 envelope dry Hidden Valley Ranch Dressing mix 1 small onion Toppings: Copped tortilla or corn chips Shredded cheese Sour cream Salsa 1. Combine the ground beef, canned items, dressing mix & onion in a slow cooker. 2. Cover. Cook on Low 4-6 hours. 3. Garnish individual servings with toppings. I have taken small corn tortillas & used a pizza cutter to turn them into bite-size strips. 

Chocolate Passion Bowl

Recipe Rating:  Prep Time: 20 min Total Time: 1 hr 20 min Makes: 16 servings, about 2/3 cup each 3 cups cold milk  2 pkg. (4-serving size each) JELL-O Chocolate Flavor Instant Pudding & Pie Filling  1 tub (8 oz.) COOL WHIP French Vanilla Whipped Topping, thawed, divided  1 baked 9-inch square brownie layer, cooled, cut into 1-inch cubes (about 5-1/2 cups)  1 pt. (2 cups) raspberries  POUR milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until well blended. Gently stir in 1 cup of the whipped topping.  PLACE half of the brownie cubes in 2-qt. serving bowl; top with layers of half each of the pudding mixture, remaining whipped topping and raspberries. Repeat all layers.  REFRIGERATE at least 1 hour before serving. Store leftover dessert in refrigerator. 

"Guess Cake."

Ingredients: Blend: 1 stick butter (softened), 1 box yellow cake mix, and 1 egg. Spread in a 13x9 greased pan. (I use a spatula to spread. It is doughy feeling.) In a separate bowl mix together: 2 2/3 cups powdered sugar, 2 eggs, 1 8oz cream cheese.  Mix with hand mixer until smooth.  Pour over top of other ingredients. Bake at 350 degrees for 35-40 min or until sides are light brown. Cool in refrigerator for 2-3 hrs. Cut into squares. (However big or small you want.) You can drizzle powdered sugar over top before you serve if you want. (This cake is better served cold I think.) This is a big hit recipe anytime I make this for any gatherings or functions.

Baked chicken fettuccine

  (A concoction put together by me) 4 Boneless Chicken Breast 1 Jar Classic Alfredo Sauce 1 Box Fettuccine Noodles Boil chicken in water. Add pepper, salt, garlic, onion powder, seasoned salt, minced onions, butter, and a little oregano and parsley. (Season to taste, use others if you wish) Cut chicken into bite size pieces when done. Cook noodles halfway, (should still be slightly chewy) In 13x9 baking dish, add chopped chicken, Alfredo sauce, half-cooked noodles, and some chicken broth (enough to cover the noodles in pan). Cover and/or stir in mozzarella cheese or white cheese blend, along with Parmesan cheese. Preheat oven to 375 degrees. Bake with lid on for 30 minutes and take lid off last 5 min. or until golden brown around edges. ENJOY! 

Pecan Pie

3 eggs ∏ cup Karo Syrup  Ï€ cup melted margarine Beat together then add 1-cup pecans Pour in pie shell Bake at 375 for about 40 minutes until knife inserted comes out clean. 

Hash Brown Casserole

1 cup grated cheddar cheese 1-cup American cheese pieces ∏ tsp. onion powder 1 tsp. pepper 1 can of cream of mushroom soup 2 cups sour cream 1 TBL. Melted margarine Mix above ingredients Put 1 bag of frozen hash brown cubes into greased 11x13 pan and spoon above ingredients on top Mix 2 cups corn flakes with 1 stick melted margarine and spoon on top. Bake at 350 for 40-45 minutes  Jennifer Griffee 

Sugar Cookies

                                            2/3 cup shortening              1 cup sugar              2 eggs              3 cups flour              2 tsps. Baking powder              1/3 cup milk              1/2 tsp salt              1/2 tsp vanilla In a separate bowl combine flour, baking powder, and salt. In a mixing bowl: Cream shortening and sugar. Add eggs. Alternate milk and flour. Add vanilla. Mix completely. Chill, roll, and cut using flour to diminish sticking. Cook at 350 degrees for 8-10 minutes. Cookies should have a faint golden brown color and be firm in the middle. Except if you want them done right then cook until they are really brown and hard! Cool and decorate.

Crunchy Onion Chicken

1 egg Chicken Breasts or Strips French's Onions Unthaw Chicken if needed. Beat egg. Dip chicken in the egg, then coat with crushed French's onions. Place in a baking pan. Bake at 400 for 20 min or until chicken is no longer pink

Pudding Bars

  1 box cake mix (any flavor) 1 box instant pudding (any flavor) 2 cups milk 1 bag chocolate chips Mix box of pudding with the milk according to the box directions. Stir in cake mix, then add the chocolate chips and mix evenly. Pour in floured cake pan and bake at 350 degrees for 30-35 minutes. Variations...can substitute chocolate chips for butterscotch or white chocolate chips.

Banana Bread

Banana Bread 1 cup sugar 2 eggs beaten 1/2 cup oil or shortening 1/2 teaspoon salt 1 teaspoon soda 2 cups flour 3 bananas "Mashed up" 1/2 cup nut meats chopped fine Will fit in 1 bread pan Bake for 1 hour at 400 for 20 minutes Then turn down to 350 for 40 minutes

Chicken Broccoli Casserole

  1 stick of butter 2 cups of celery diced small 1 cup of onions diced 1/4 cup green pepper 8 oz of fresh sliced mushrooms 1 lb. fresh chopped broccoli (I cut long & thin) 2 lbs. cooked chopped chicken 2 packages of 1 lb. each of cream cheese 1 teaspoon salt 1 teaspoon pepper 1/4 teaspoon garlic salt Sauté all vegetables in the melted butter until tender Add chicken meat plus seasonings Add cream cheese to mixture and blend over low heat until cheese is melted. Pour mixture into a buttered casserole and heat in oven at 350 until top is golden brown. Serves 4 to 6 (I add garlic power 2 teaspoons) Serve with salad and rolls  Can make ahead and freeze 

Mae Riffl's Angel Kisses

5 T Sugar 1 C Butter 2 C Flour 1 C Nuts (chopped walnuts or pecans) 1 t Vanilla 1 t  Water Powdered Sugar Mix (by hand is the best way!) all of the above ingredients. Roll into 1" balls and freeze. Place frozen dough on ungreased cookie sheet and bake at 350 degrees for 15 minutes (until bottom of cookie is slightly browned. Cool slightly and roll in powdered sugar (the dough will be delicate). When completely cool roll cookie in powdered sugar again. 

Apple Enchilada Dessert

1 (21 ounce) can apple pie filling 4 (8-inch) flour tortillas 1 teaspoon ground cinnamon 1/3 cup margarine 1/2 cup sugar 1/2 cup packed brown sugar 1/2 cup water Ice cream and/or whip cream  Preheat oven to 350 degrees. Spoon fruit evenly onto all tortillas, sprinkle with cinnamon. Roll up tortillas and place seem side down on lightly greased 8x8 baking pan. Bring margarine, sugars, and water to a boil in a medium sauce pan. Reduce heater and simmer, stirring constantly for 3 minutes. Pour sauce evenly over tortillas, sprinkle with extra cinnamon on top if desired. Bake in preheated oven for 20 minutes. Makes 4 large tortillas. May be cut in half to serve 8. Top with ice cream and/or whip cream.
